Here's to my first serious recipe blog! :) So I've been trying to substitute our family's favorite foods with healthier versions and I'd say this one was a definite success!
Helpful Notes: If your coconut oil is in a liquid state, you can go ahead and use it in the recipe. Just remember to use your hands when rolling out the dough instead of the pin or you'll end up with a very gooey rolling pin, haha! Also, if you don't have a biscuit cutter, just use a glass jar.
My husband is terrible about skipping breakfast so I'm hoping these little sandwiches will kick that in the butt! Whisk 4 eggs + a splash of coconut milk together, divide into a muffin tray, and bake at 425° F for 5mins. Then slice the biscuits in half, add your cooked egg circle, & a small slice of cheese of your choice. I also would have added sausage if I had it...Maybe next time. Without further ado, here's the biscuit recipe!
•3tsp Baking Powder
•1tsp Salt
Directions
1.) Preheat oven to 425° F. Combine flour, baking powder, and salt into a mixing bowl and mix.
2.) Add coconut oil & use a fork to cut the oil into the flour until the mixture is like fine crumbs.
3.)Stir in the milk until the mixture forms a soft dough and no longer sticks to the sides of the bowl.
4.) Knead the mixture until combined but be careful not to over-knead. Turn the dough out onto a cutting board that has been lightly dusted with flour. Gently roll out until it reaches a 1/2inch thickness.
5.) Use a biscuit cutter (or a glass jar) to cut out the biscuits and transfer onto a baking sheet greased with....just guess....coconut oil :)
6.) Bake for 10mins or until the biscuits have risen and have browned ever so slightly. Remove and serve immediately or cool and freeze for later use.
Yield: 12-14 biscuits
